Participants will learn a healthier way of cooking focusing on small portions of Greece and Turkey. A list of dietary guidelines and ingredients will be used to develop menus using the right blend of ingredients like olive oil, grains, vegetables, fruits, and seafood.

How to Incorporate Seasonality and Trends into your Sandwich Breads and Fillings
The trainees for this program will learn how to prepare several “Seasonal themed” breads and Sandwich fillings. These recipes will be a guide to prepare and incorporate a wider variety of seasonality and current trends in the dining center’s Sandwich program. We will focus on adding different fresh local seasonal ingredients, mastering important baking techniques, and providing tips for creating signature recipes. We will provide some great resource information to assist Chefs refine their current process for menu development. Lastly, we will focus on how to better market these items.
